Recipe taken from Good Housekeeping
- 2 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 1/4 tsp salt
- 3 cups cubed, seedless watermelon
- 3 cups sliced peaches
- 3 cups baby arugula
- 1/2 cup packed basil leaves
- 1/4 cup toasted hazelnuts, chopped
- In large bowl, whisk olive oil, red wine vinegar and salt.
- Add watermelon, peaches and baby arugula; basil leaves; and toasted hazelnuts.
- Dress salad and serve. Approx. 4 servings
